Pumpkin ~ Peanut butter ~ Protein ~ Muffins ~ Recipe

Its pumpkin season! Are you a fan of pumpkin everything? Peanut butter and pumpkin are 2 of my favorite things. My daughter and grandchildren love to bake so we thought why not try to create something healthy and yummy. After a couple of flops, I think we have a winner :)

Pumpkin – Peanut butter – Protein – Muffins

Makes 12



In a large bowl combine the following ingredients:

  • 1 cup pumpkin puree
  • 1 cup peanut butter
  • 2/3 cup of erythritol
  • 3/4 cup of oat bran
  • 1 tablespoon of cinnamon
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of pumpkin pie spice
  • 1/4 teaspoon of nutmeg
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 scoops of whey protein powder (I use vanilla)

Beat all ingredients for about a min. Pour batter evenly into a sprayed cupcake pan (makes 12 perfect muffins). Bake on 350 for about 12-15 min/ or when they are golden brown. I usually take them out when they have just a little batter left on the toothpick. Remove from pan and let them cool.
